A vibrant mix of crisp, colorful vegetables tossed with sesame and finished with a bright ginger vinaigrette. It’s fresh and flavorful with just the right balance of crunch, nuttiness, and a little sweetness. This salad is easy enough for everyday, but special enough to stand out on the table.
INGREDIENTS
For the dressing:
- 1 green onion, sliced
- 1 inch knob ginger, peeled and grated
- 1 clove garlic, grated (optional)
- 2 tbsp orange juice
- 2 tbsp lemon juice
- 1 tbsp rice vinegar
- 1/2 tbsp maple syrup
- 1 tbsp soy sauce
- 1/4 cup oil (I use grapeseed)
- 2 tbsp sesame seeds
- 1 tsp sesame oil
For the salad:
- Salad greens (I used Boston lettuce and spinach)
- Shredded Napa cabbage
- Grated carrots
- Avocado
- Baby corn
- Mandarin orange segments
- Dried cranberries or cherries
- Toasted pumpkin seeds and/or peanuts
- Fresh mint
DIRECTIONS
- Place green onion, garlic and ginger in jar and top with juices and vinegar.
- Allow to marinate for a few minutes. Add remaining salad dressing ingredients and shake.
- Assemble salad ingredients and top with dressing.
- Enjoy!
